Asian-Inspired Shredded Chicken (Instant Pot)

I may be biased but I am loving this Asian-Inspired Shredded Chicken recipe. It is such a quick and easy dinner to throw together in your Instant Pot because as much as I love home cooked meals, I don’t always love spending hours in the kitchen especially during the work week. 

And when I say this is a quick and easy dinner, I mean it. The only thing you need to chop/prep is some onion and everything else gets thrown right into the instant pot, pressure cooked for 5 mins (plus 10 minutes of preheating time) and that’s it!

This dish is reminiscent of the Cantonese Yellow Chicken dish that I grew up with especially when it is served with some sliced green onions. 

You can easily have this quick and easy instant pot dinner on the table within 30 minutes. While the chicken cooks in the instant pot, you can turn your attention to prepping some jasmine rice and boiling or steaming a quick veggie like broccoli or bok choy. Everything should finish cooking at about the same time so you’ll have dinner on the table in a breeze!

In other words, this is a super simple versatile recipe that you can easily customize to your liking and whip up within half an hour 🙂 


Ingredients

  • 1.4 kg Chicken Thighs boneless, skinless

  • 2 cups Chicken Broth or water, salted broth works well

  • 1/2 tsp Garlic Powder or 6 fresh garlic cloves

  • 2 tsp Sea Salt

  • 2 Bay Leaf

  • 1 tsp Turmeric optional

  • 1/2 Yellow Onion sliced thinly, lengthwise


  1. Add chicken to the Instant Pot then add the garlic powder, turmeric, salt, bay leaves, onions and chicken stock. Submerge as much of the chicken as possible in the liquid.

  2. Secure the lid of the instant pot and pressure cook at on high for 5 minutes then natural release for 5 minutes.

  3. Using tongs, transfer the chicken to a large bowl or cutting board and shred the chicken with two forks or roughly chop with a knife.

  4. Add the shredded chicken back to the instant pot and mix well with the flavourful broth. Taste and adjust the chicken adding extra salt or pepper if needed. Option to garnish with thinly sliced green onions or chopped cilantro.


Extra Flavour: try adding about 2 slices of ginger to the pot before pressure cooking for extra flavour and aroma.
